Original Grilled Watermelon Poke Recipe by Sustainabowl!

The experience poke chef of Sustainabowl shared their secret recipe for the original watermelon poke. Which can easily be made at home?
- A seedless baby watermelon.
1 Medium sized onion.
2 green onions (just the stem).
1 tablespoon of minced or chopped garlic.
4 tablespoons of sesame oil.
A half cup of soy sauce or tamari or liquid amino.
1 teaspoon of rice wine vinegar.
2 tablespoons of Japanese spice mix named togarashi.
2 tablespoons of white or black sesame seeds.
1 toasted seaweed nori sheet.
1 medium sized lemon.
2 medium avocados.
Half teaspoon of salt and pepper or to taste.
Remove the watermelon from the rind and clean it. Cut the watermelon into large pieces so that it can be put on the grill.
Peel the onion and cut it into the half.
Take a separate bowl and mix together the togarashi (Japanese spices), chili flakes and sesame seeds. Now tore and crush the nori seaweed sheet with your hands and add it into the togarashi’s mix.
Now make a liquid marinade by whisking together the sesame oil, soy sauce, rice wine vinegar, and lemon juice.
Now heat the grilling pan or stand and put the big pieces of watermelon on it. Grill it till it gets the prominent grilling marks. It’ll take around 5 minutes each side. Also, add the onion to grill. Take the watermelon and onion aside and let it cool.
Once the watermelon is cooled enough to be touched and handled. Cut the watermelon slices into medium diced cubes. Also Use a strainer to squeeze out all the excess water, which will be a lot. Also finely chop the grilled onion.
Now bring the watermelon to a resealable container. Add the diced onion into it. Add the prepared liquid marinade with soy sauce, sesame seed etc. into it and set it to the refrigerator.
Now finely cut the avocado into small pieces. Chop the cilantro and mix it with avocado. Now squeeze the other half of the lemon into the bowl and add a little salt and pepper into it.
Add the thinly sliced scallions into the refrigerated melon. Serve the poke with the avocado’s mixture topped with scallions and togarashi mix. Now adjust the salt and pepper if required.
If you feel like its getting watery then strain the extra liquid marinate which you don’t want flowing all over.
